- Place in a casserole dish and cook in the oven for up to 2 hours.
Why not try:
- Kangaroo Stir-Fry with Noodles: Slice the diced kangaroo into smaller strips and quickly sear in a very hot wok with a little oil. Remove and set aside, then stir-fry peppers, broccoli, carrots and spring onions until tender. Return the kangaroo to the pan with soy sauce, garlic, ginger and a little honey. Toss through cooked noodles and serve immediately.
- Kangaroo Curry with Rice: Sear the diced kangaroo in a hot pan with a little oil, then remove and set aside. Cook diced onion, garlic and ginger until softened before adding curry paste, chopped tomatoes and coconut milk. Return the kangaroo to the pan and simmer gently until cooked to your liking. Serve with basmati rice, naan bread and fresh coriander.
- Kangaroo Kebabs with Couscous: Toss the diced kangaroo in olive oil, garlic, smoked paprika and lemon juice. Thread onto skewers with peppers and red onion, then grill or barbecue until cooked to your liking. Serve with couscous, a fresh salad and a cooling yoghurt and mint dressing.
- Kangaroo Fajitas: Season the diced kangaroo with fajita seasoning and quickly sear in a hot skillet. Remove and set aside while you cook sliced peppers and onions until softened. Return the kangaroo to the pan and serve in warm tortillas with salsa, guacamole, sour cream and grated cheese.
- Kangaroo Teriyaki Rice Bowl: Quickly sear the diced kangaroo in a hot skillet, then add a homemade teriyaki sauce made with soy sauce, honey, garlic and ginger. Cook until the sauce coats the meat, being careful not to overcook the kangaroo. Serve over steamed rice with broccoli, shredded carrot and spring onions.
- Kangaroo Pasta with Tomato and Chilli: Sear the diced kangaroo in a hot skillet with olive oil, then remove and set aside. Sauté garlic and chilli before adding chopped tomatoes and Italian herbs. Simmer the sauce, then return the kangaroo to the pan and cook briefly. Toss with cooked penne or spaghetti and finish with grated Parmesan.
- Kangaroo Loaded Flatbreads: Quickly sear the diced kangaroo with smoked paprika, cumin and garlic. Warm flatbreads and fill with the kangaroo, shredded lettuce, diced tomatoes, cucumber and red onion. Add hummus or garlic yoghurt and finish with fresh herbs and a squeeze of lemon.
- Kangaroo Nachos: Season and quickly sear the diced kangaroo, then slice into smaller pieces. Spread tortilla chips on a baking tray and top with grated cheddar, the kangaroo, jalapeños and red onion. Bake until the cheese is melted, then serve with salsa, guacamole and sour cream.

Delicious and very lean. Worth a try for beef/venison eaters.
