• Mouflon and Mushroom Stroganoff: Brown the diced mouflon in a hot pan, then set aside. Sauté sliced mushrooms and onions until softened before adding garlic, paprika and a splash of stock. Return the mouflon to the pan and stir through sour cream. Serve with rice or pasta.
• Mouflon and Chorizo Rice: Brown the diced mouflon with sliced chorizo, then add onion, peppers, garlic and smoked paprika. Stir through cooked rice and a little stock, then simmer until everything is hot and well combined. Finish with fresh parsley and a squeeze of lemon.
