Why not try:
- Seared Horse Fillet with Red Wine Reduction: Season horse fillets with a blend of salt, black pepper, and minced garlic. Sear the fillets in a hot skillet with a bit of olive oil until they're browned on all sides and cooked to your liking. Remove the fillets and let them rest. In the same skillet, sauté shallots until translucent. Deglaze the pan with red wine and simmer until reduced. Stir in beef broth and a sprig of rosemary. Serve the seared horse fillet with the red wine reduction sauce.
- Grilled Horse Fillet with Chimichurri: Marinate horse fillets in a mixture of olive oil, fresh herbs like parsley and oregano, minced garlic, red wine vinegar, and crushed red pepper flakes. Grill the fillets to your desired doneness and serve them with a zesty chimichurri sauce made from chopped herbs, garlic, red wine vinegar, and olive oil.
- Horse Fillet Steak Salad: Grill or pan-sear horse fillet steaks and slice them into thin strips and arrange the sliced fillet over a bed of mixed greens. Add roasted beets, crumbled goat cheese, candied pecans, and a balsamic vinaigrette dressing for a balanced and flavorful salad.
- Horse Fillet Stir-Fry: Slice horse fillets thinly and stir-fry them in a hot wok or skillet with colourful vegetables like bell peppers, snap peas, and carrots. Add a stir-fry sauce made from soy sauce, ginger, garlic, and a touch of honey. Then serve the horse fillet stir-fry over steamed jasmine rice or noodles.

For best results pan fry from defrost. The following instructions are guidelines only. Ensure that the product is thoroughly cooked before serving.
Do NOT refreeze after defrosting.
PAN FRY
- Defrost in a refrigerator for 12 hours
- Remove from all packaging before cooking.
- Allow steak to rest at room temperature for 10 minutes before cooking.
- Rub the steak with a little oil and season with salt and pepper.
- Heat a heavy based frying pan over a high heat for 2-3 minutes.
- Place the steak in the dry pan and cook over a high heat for 1 minute each side.
- Add additional timing for preferred steak:
- 2 minutes each side for rare.
- 3 minutes each side for medium.
- 4 minutes each side for well done.
- Once cooked, rest for at least 5 mins.
BBQ
- Defrost in a refrigerator for 12 hours
- Remove from all packaging before cooking.
- Allow steak to rest at room temperature for 10 minutes before cooking.
- Rub the steak with a little oil, and season with salt and pepper.
- Ensure the BBQ is hot, place gently on the griddle & cook for 2-3 minutes each side.
- Add additional timing for preferred steak:
- 2 minutes each side for rare.
- 3 minutes each side for medium.
- 4 minutes each side for well done.
- Once cooked, rest for at least 5 mins.
Keep frozen at -18°C. Use by date indicated on the pack. Should this product defrost, keep refrigerated and consume within 2 days.

I thought Dartmoor pony was good, but this was much better. Quick to cook with a lovely rich flavour and great texture.
