What's it like? Our oven ready guinea fowl is wild and offers a small, unique twist on a Sunday roast. Guinea fowls are leaner than chicken and have a gamey flavour. Simply pan fry - try adding smoked bacon & lemon, then toss into a salad

  • Stuffed Guinea Fowl: Prepare a stuffing mixture by combining breadcrumbs, sautéed onions, garlic, chopped mushrooms, herbs like parsley and thyme, and a beaten egg. Stuff the guinea fowl with the mixture and tie the legs together with kitchen twine. Roast in the oven until the skin is golden and the stuffing is cooked. Serve the stuffed guinea fowl with gravy, roasted potatoes, and steamed vegetables.
  • Guinea Fowl Coq au Vin: In a large pot, sauté diced bacon until crispy, then remove and set aside. Brown the guinea fowl in the bacon fat. Remove the guinea fowl, and sauté chopped onions, carrots, and celery until softened. Deglaze the pot with red wine, add the guinea fowl, and simmer until the meat is tender. Serve with mashed potatoes or crusty bread.
